Description

Leczo is a quick and comforting dish featuring vegetables and sausage, perfect for a warm meal on busy days.


Ingredients

Scale
  • 23 red bell peppers
  • 1 medium zucchini
  • 200g sausage (e.g. smoked, chicken)
  • 400g tomatoes (fresh or canned)
  • 1 onion
  • 2 cloves garlic
  • Salt to taste
  • Pepper to taste
  • Sweet paprika to taste
  • Smoked paprika to taste

Instructions

  1. Slice the sausage into thicker half-moons and sauté in a heated skillet until it begins to render fat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the chopped bell peppers and zucchini, mixing everything together.
  4. Once the veggies soften, add the tomatoes and simmer for a few minutes.
  5. Season to taste with salt, pepper, and paprika.
  6. Optionally, add tomato paste for a heartier version.
  7. Cover the pot and let it sit to meld the flavors together.

Notes

For a vegetarian version, omit the sausage and consider adding tofu or chickpeas. Leczo can be frozen and reheated later.
