Leczo is a quick and comforting dish featuring vegetables and sausage, perfect for a warm meal on busy days.
Ingredients

- 2–3 red bell peppers
- 1 medium zucchini
- 200g sausage (e.g. smoked, chicken)
- 400g tomatoes (fresh or canned)
- 1 onion
- 2 cloves garlic
- Salt to taste
- Pepper to taste
- Sweet paprika to taste
- Smoked paprika to taste
Instructions
- Slice the sausage into thicker half-moons and sauté in a heated skillet until it begins to render fat.
- Add the chopped onion and sauté until translucent.
- Add the chopped bell peppers and zucchini, mixing everything together.
- Once the veggies soften, add the tomatoes and simmer for a few minutes.
- Season to taste with salt, pepper, and paprika.
- Optionally, add tomato paste for a heartier version.
- Cover the pot and let it sit to meld the flavors together.
Notes
For a vegetarian version, omit the sausage and consider adding tofu or chickpeas. Leczo can be frozen and reheated later.
