Description

A quick and hearty vegetable stew made with peppers, onions, and sausage, ideal for busy days and comforting meals.


Ingredients

  • 3 colorful bell peppers, chopped
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 200g sausage (preferably Śląska or Podwawelska)
  • 2 cups canned tomatoes or 4 fresh tomatoes, diced
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon sweet paprika powder
  • 1 teaspoon hot paprika powder (optional)
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pan over medium heat, and sauté the diced onion until translucent.
  2. Add the sliced sausage and cook until browned.
  3. Stir in the bell peppers and cook until they begin to soften.
  4. Add the tomatoes and mix well. Cook for a few more minutes until everything is heated through.
  5. Season with salt, pepper, and paprika. Cook briefly and avoid overcooking the peppers.
  6. Let simmer on low heat for a few minutes to allow the flavors to meld.

Notes

For a vegetarian version, substitute sausage with beans or lentils. Adjust vegetable proportions to personal taste.
