A quick and hearty vegetable stew made with peppers, onions, and sausage, ideal for busy days and comforting meals.
Ingredients

- 3 colorful bell peppers, chopped
- 1 large onion, diced
- 2 cloves of garlic, minced
- 200g sausage (preferably Śląska or Podwawelska)
- 2 cups canned tomatoes or 4 fresh tomatoes, diced
- Salt to taste
- Black pepper to taste
- 1 teaspoon sweet paprika powder
- 1 teaspoon hot paprika powder (optional)
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pan over medium heat, and sauté the diced onion until translucent.
- Add the sliced sausage and cook until browned.
- Stir in the bell peppers and cook until they begin to soften.
- Add the tomatoes and mix well. Cook for a few more minutes until everything is heated through.
- Season with salt, pepper, and paprika. Cook briefly and avoid overcooking the peppers.
- Let simmer on low heat for a few minutes to allow the flavors to meld.
Notes
For a vegetarian version, substitute sausage with beans or lentils. Adjust vegetable proportions to personal taste.
